Behind the farm to school scenes
We are in the midst of carrying out a multi-faceted, two-year farm-to-school grant, and things are beginning to take shape.
Shoko Kumagi, our Farm-to-School consultant, visited Riverview School District’s cafeteria staff a few weeks ago to introduce them to a few of her favorite radish recipes. Through its Harvest of the Month program, cafeterias at all Riverview schools are serving an ingredient from local farms every month.
April’s ingredient is radishes, so Shoko offered three ideas: radish slaw, roasted radishes, and radish salsa, that would be easy to prepare and hopefully attractive to students. April’s Harvest of the Month date is in less than two weeks, so we will see which dish they choose to feature!
